Special Fried Rice

Jasmine Rice (2 cups)
Coconut Milk (1 can)
Pork Butt (Chopped) 1lb
Chicken breast (Stripped) 1lb
Shrimp 1/2 lb
Garlic (Paper thin slices) 1 head
Onion (Chopped) 1 large
Ginger (Minced) about 2" square
Scallions (Chopped) about 4-5
Hot peppers (Thin slices) 3 or 4
Mushrooms (Sliced) 1/2 lb

Soy Sauce 1/4 cup
Rice Wine Vinegar 1/8 cup

Oil

Prepare ingredients as pictured in middle.
(Chicken marinaded with soy sauce vinegar and ginger).
(Rice cooked using 1 can of coconut milk and 1 cup water)
Heat oil, cook chicken with onions (reserve marinade and place with shrimp. add garlic to shrimp and stir).
When chicken is close to set add pork and stir.
Add mushrooms and stir.
Meanwhile in second pan heat oil. Fry rice and stir frequently.
Transfer liquids from chicken/pork to rice as it accumulates.
When chicken/pork completely cooked transfer to holding dish.
Add shrimp/garlic to hot pan. Cook for a few minutes.
Add scallions (bottoms) and peppers.
When done stir into rice. Mix well.
Stir rice into chicken/pork/mushroom mixture.
Mix the Scallion tops into the final result.
ENJOY!!!!!
For about $15 ingredients made a large wok full of this delicious wonderful meal! Enough for 3 meals for 2 people.
